Fava Bean Recipe
Olive oil ( enough to sauté in)
3 large onions sliced or chopped
2 cloves garlic diced fine
2 Tbsp crushed red pepper (jar
kind not dry)
2 Tbsp parsley
salt
2 tsp paprika
1/2 tsp pepper
1/4 cup tomato sauce
2 cups hot water
2-- 19 oz cans of fava beans
2-3 sticks chourizo or chourico
cut into chunks
Sauté onion and garlic in olive
oil over medium heat. When
golden add all other ingredients
except fava beans. Bring to a
boil, lower heat and simmer 30
mins. for flavor to meld. Add
favas an cook 30+ mins. more. The
longer you cook them the softer
the beans. But it will be ready
to eat in only 30 mins. The
sauce gets nice and thick so
have plenty of crusty bread on
hand for dipping!
