Portuguese ( Portagee)Beans
Pre-cook
beans for at least one hour.
Save the water you cooked the
beans in.
3-- packages of Linguica
2-- Lbs of pink dry beans
1-- med. yellow onion
6-- garlic cloves or 2 tsp of
crushed garlic
1 and
1/2 tbs. of allspice
2 and 1/2
tbs. of cumin
1-- large can of peeled and
diced tomatoes
1-- small can of tomato sauce
1/4-- cup of bacon grease (
Emeril will love this)
Chop or press garlic if
needed, chop onion, saute this
in the bacon grease. Slice the
linguica, fry the linguica until
" greasy" not in the same pan
with the onion and garlic. Add
the onion/garlic mixture and
seasonings to the linguica. Add
3 cups of the bean water and
simmer for 20 to 30 minutes. Add
the beans, tomatoes, and tomato
sauce cook until done.
