Sopa D'Azeda ( Sour Soup ) Recipe
1/2 lb. of
1 med. beef shank
1 med. to large onion, chopped
1 -8 oz. can of tomato sauce
1 and 1/2 cups of elbow macaroni
1-16 oz. can of beans, red
2 large potatoes, 1 whole, one cut into 1
inch chunks, both peeled
1 med, size sweet potato, cut in one inch
salt to taste
pepper to taste.
You will need a 8 qt. pan.
Fill the pan half way with water, put
beef shank, chourico, onion, tomato sauce,
salt and pepper. Let boil until the meat
is cooked. Remove beef and chourico. Put
one potato whole in the pan. Also put in
the cut up potato and sweet potato, boil
for 15 minutes.
Add macaroni and let boil until almost
done. Then add the beans juice and all.
Let cook until macaroni is done. Remove
from heat you can save the meat and whole
potato as a second course.
You can also add spare ribs, pig's feet
or any other beef portion to the soup.
